Mexican Chicken Corn Chowder

4 cups chopped chicken (I use Rotisserie)
1/2 onion diced
1/4 cup butter
2 small cans of chopped green chilies
2 cups shredded monterrey Jack cheese
4 cups chicken broth
small carton heavy cream or half and half
1 bag frozen corn
seasoning....I use cumin, garlic, cajun, whatever else I feel like

In large pan saute the onion in butter add chopped chicken, corn and green chilies and season well
let cook for about 10 minutes stirring often, add chicken broth let simmer 15-20 minutes
add shredded cheese and cream turn heat to low and let simmer for 10 minutes
I add cilantro after I add the cream.

Alone time!

I always have Martin Luther King day off work, but this year it worked out that my kids have school and Matt has work......SOOOO I have enjoyed a day ALONE!!! This does not happen very often, but when it does I try to really enjoy it. Last night I talked Matt into getting the kids ready for school, so I slept late this morning! I got up watched some TV had some yummy Mexican Chicken Corn Chowder for lunch (leftovers from last night, recipe coming soon) and cleaned house. I LOVE to clean house when I am alone. Cathy Drew kept me company for a while, but now I am going to get Kaden from school and we are going for a bike ride. He bought himself a new bike on Saturday so that is all he wants to do right now. I know this isn't every one's idea of a fabulous day but I LOVE it!!

food I am making or want to make

So I constantly surf thru recipe blogs and allrecipes.com is one of my favorite sites!!

I just made Stovetop casserole and spaghetti sauce and meatballs in the crockpot!! I have a goal of atleast one crockpot meal per week, I didn't do so well over the holidays, but I hope to get back to that.

Stovetop Casserole

2 boxes of Stovetop stuffing (made according to directions)
1 can of cream of chicken soup
1/2 onion diced
2 tbsp butter
2 cups of diced chicken (I use Rotisserie)
1/2 lb of velveeta cubes
1/2 cup chicken broth or water

Preheat oven to 350
in a large pan melt the butter and saute the onions, add the diced chicken
pour the cream of chicken into the prepared stovetop and add the chicken broth
add the chicken mixture and the cheese stir
pour into large casserole dish sprayed with Pam
Bake about 30 minutes until hot and bubbly


Crockpot Meatballs and Spaghetti sauce

1 bag of frozen meatballs
1 large jar of spaghetti sauce (I use Ragu)
2 packages of spaghetti seasoning packet

pour meatballs into crockpot
pour spaghetti sauce over
put about 1/2 cup of water into the empty jar and add the seasoning packet and shake to combine. pour that into the crockpot and cook on low for 6-8 hours or high for 4 hours.

I make spaghetti and meatballs, meatball subs, meatball pizza or calzones out of this

I am new to this!!

I thought I would start a blog....I love to discuss my kids and I love to cook and try out new recipe's....I decided I need a place to do this!
